A few weeks ago, my cousin, Ian, was selected to join the Junior Bedan Masterchef Contest in school. I revised his salad recipe and added some toasted walnuts, mangoes, raisins, and other spices for the shrimp marinade. The school informed them to prepare the chopping and cooking at home. The only thing they have to do in the contest is to assemble and plate. Unfortunately, he got sick the night before the contest. He can’t miss school on contest day because his partner/assistant depended on him. So I came to the rescue and did most of the preparing and the cooking. Thank God all the work paid off, he won GOLD! The teachers, judges and parents loved it! Even I had a small bowl of the salad the night before the contest.. ssshhhh! Hihihi!
Fresh Shrimp Salad Recipe
Green Ice Lettuce, washed, dried and torn
Romaine Lettuce, washed, dried and torn
Cherry Tomatoes, slice in halves
Grilled Yellow and Red Large Bell Peppers
Ripe Mangoes, Slice into strips or cubes
Walnuts, Toasted and Coarsely Chopped
Feta Cheese, coarsely chopped (Do not discard the oil, it will be used for the salad dressing)
Shrimps, peeled and deveined
Parmesan Cheese
Shrimp Marinate:
Olive Oil
Dried Basil Leaves
Spanish Paprika

1. Marinate the shrimps. Place in a bowl, cover with cling wrap (make sure that the cling wrap is placed right on top of the shrimp so that it won’t get water from the cold and get mixed inside), or place in a ziplock and refrigerate overnight.
2. Place your shrimps on a non-stick pan. Pan-grill your shrimp on a stove top until cooked (when it turns orange).
3. For the grilled bellpeppers. Season them with a bit of salt, pepper and olive oil. Use the same pan you used for the shrimps. Pan-grill on stove top until brown marks appear.

Tip: Heat the pan before frying and keep it on medium heat. You want your bellpeppers to still be crisp and not wilted.
4. For the salad dressing. Simply strain the oil from the feta cheese. Season with pepper.
5. Assemble you salad. Add the dressing. Season with a little salt and pepper if desired.
